It’s already mid-January but Thailand is still under the cold spell. This is usually caused by a powerful high pressure ridge and could also be a result from the winter breeze willingly shared by the neighboring snowy China. Motorists really need to take extra caution when driving their vehicles in the morning due to heavy fogs that blind the curves, widest streets and clearest mirrors, reducing visibility to as much as 5-10 meters.
The dry winter in the kingdom has made us to become too lazy to resume regular tennis workouts after work or even on weekends. It somehow gives us a feeling of enjoying extended holidays — with more foods on the table but with less exercise. How about a more protein, less fat diet? Nothing really tops the turkey* delight! So, let’s try this super yummy Thai Turkey Roll Up!
Ingredients — 4 tsp cilantro, washed, drained, chilled; 4, 8″ whole wheat, high-protein tortillas; 2 oz lettuce, washed, chilled, shredded; peanut sauce; 2 oz red onion, slice thin; and 1 lb oven roasted turkey breast, sliced thin.
Procedure — Spread each tortilla with the peanut sauce then layer each with 4 slices of turkey (4 oz). Sprinkle each evenly with 1 tsbp onion, 1 tsbp lettuce and 1 tsp cilantro. Roll up tightly and cut on the diagonal. Best when served chilled.
*Turkey has 8% more protein than beef or chicken and 0% saturated fat.
