I’ve been craving for a freshly-baked blueberry cheese pie for months now. It’s really hard to find one here in Bangkok unless you go to some big, high-starred hotels. I had it almost everyday 2 years back when we’re still operating our Perfect Delights Bakeshop. I was almost about to learn the craft when we were forced to dissolve the business due to time and staff constraints. Would you believe it, I’ve not been to any kitchens for a long, long time (I hate cooking!) but I almost could bake blueberry/raspberry cheese pie, mango pie, pineapple pie, banana cheese pie, apple cheese pie, apple crumple, pure cheese pie, and a yoghurt pie at that time. The problem was timing. You can’t just give your business half your time. So sad!
Meanwhile, I’ve just found a new craze and I’d love to try this out today! Check this out!
Ingredients — 1 tsp cinnamon sugar (1 tsp sugar with a pinch of cinnamon), 4 6″ flour or whole-wheat tortillas, 1 cup finely chopped or coarsely grated apple (about 1 medium apple), 2 tbs low-fat cream cheese, 1/2 cup raisins, and 2 tsp honey.
Procedure — Combine the honey and cream cheese in a small bowl. Stir in the raisins and apples. Divide the raisin-apple mixture between 4 tortillas. Then sprinkle with cinnamon sugar. Roll and place seam side down on a microwave-safe plate. Heat each roll on half power for 1 min. or till warmed through. You can also add 1/2 tsp curry powder to the cream cheese mixture and omit the cinnamon sugar. Then serve and enjoy this healthy snack.
