A Yogurt Dip for Confetti Quesadillas — Ingredients: 12 soft corn tortillas, 1/2 tsp. of salt, 1 cup (4 oz.) of shredded part-skim Monterey Jack cheese, 1/4 cup of finely minced cilantro, 1 cup (4 oz.) of shredded part-skim Colby cheese, 2 cups of plain non-fat yogurt, 1/2 cup of corn kernels or black beans, 1 finely minced jalapeno pepper, 1/2 cup of coarsely chopped cilantro, and 1 finely minced red bell pepper.
Procedure (Confetti Quesadillas): Preheat a large skillet over low heat. Divide the cheese, corn, 1/2 cup chopped cilantro, and peppers among the tortillas, cover each with a second tortilla. Place the tortilla in skillet or on grill until the cheese is melted, for about 3 mins. Flip and cook the other side until the color becomes golden, for about 1 min. Repeat with the remaining quesadillas. Cut into wedges and serve with a dollop of Cilantro Yogurt Dip.
Procedure (Cilantro Yogurt Dip): Line a strainer with a paper towel and place over a mixing bowl. Pour in the yogurt and let drain until it is the consistency of sour cream, for about 1 hour. Then transfer to mixing bowl, stir in 1/4 cup of minced cilantro, and salt. *Visit 3aday.org.
